A straight up Old World Saison with elevated hop levels to appeal to a New World palate. Golden in color and often slightly hazy from grains like spelt and rye. Clean malt backbone supports the bracing bitter/herbal/floral characters from Slovenian, Czech, and German noble hops in both the aromas and flavors. Light body with a dry, peppery, and cleanly bitter finish.
Probably the name "Bon Souvenir" should be explained. In French it transliterates to "Good Memory". More poetically, you might think back to a really nice beer you had on a pleasant afternoon long ago, smile, and say "Ah, Bon Souvenir!" It's a bit analogous to "Back in the day." But why name a beer Bon Souvenir? Well, because when I first drank Saison back in the day, they all came from France and the south of Belgium (where they speak French). This beer is brewed in the style in which Saisons are made in the Old World - clean, crisp, and refreshing, with a dry invigorating finish. It brings me fond memories of the Saisons I first drank when I discovered the style many years ago.

In August of 2016 we poured the last glass of BCT Brewing Project beer. Though the BCT Brewing Project is no longer a thing, we designed all of the beers, and we still design award winning beer for craft breweries internationally.
